Pastry Chef
We have an exciting opportunity for a Pastry Chef to join our Southern Ocean Lodge family on Kangaroo Island.
Dining at Southern Ocean Lodge is both a dynamic delight for the senses and a true gastronomic journey of Kangaroo Island and South Australia; a ‘produce to plate’ approach is our passion. The daily designed menu honours fine local ingredients with a cuisine style at once sophisticated and simple to promote the intense purity of flavours and to create a very special dining experience, unique to the Island and to Southern Ocean Lodge.
As Pastry Chef you are a pivotal member of the kitchen team and will be responsible for delivering a world-class culinary experience for our discerning, well-travelled guests, utilising the incredibly abundant local produce from Kangaroo Island and South Australia.
This is a full time role inclusive of accommodation, meals and utilities as provided in our onsite staff village.

Maintenance Engineer
We have an exciting opportunity for Maintenance Engineer to join our Southern Ocean Lodge family on Kangaroo Island.
The Role:
This is the opportunity of a lifetime for an enthusiastic hands-on Maintenance Engineer to oversee and maintain our brand-new facilities. Where your day is spent managing state of the art systems including the latest in hybrid renewable energy, reverse osmosis and potable water, waste-water treatment, overarched by our high-tech Building Management System (BMS).
Are you passionate about environmental sustainability? You’ll be pleased to know we have a 600kW solar farm and 560kW of Redflow batteries and Caterpillar Diesel generators with the latest Victron control systems helping us significantly reduce our carbon footprint. You’ll assist in maintaining the filters and pumps for the 5+ million litres of potable water that is collected through rainwater harvesting and desalination of bore water, contributing to our bushfire suppression systems. All these systems are controlled and monitored through a high-tech BMS with alarm and failover functionality.
This role requires someone who can effortlessly move between managing these state-of-the-art systems and being a hands-on leader who can support the small maintenance team.
You will have…
- Extensive experience in maintenance in the hotel/resort industry
- Management experience in a remote working environment
- Extensive operational experience with Building Management systems (BMS) to achieve optimum energy efficiency
- A great sense of humour and the ability to instil this approach in your team
- The willingness to support the maintenance and broader lodge team in day-to-day operations

Housekeeping Manager
Elevate your career with this rewarding opportunity for an Housekeeping Manager to be part of the Southern Ocean Lodge re-opening team.

The Role:
This is the opportunity of a lifetime for an enthusiastic hands-on Housekeeping Manager to lead a small team to ensure our brand-new suites and public areas are maintained to the highest standard.
Reporting to the General Managers and with an expected start date in August, you will train and develop your newly formed team to achieve high standards of cleanliness. You will be a housekeeping leader with a passion for empowering, developing and motivating your team to succeed. Your energetic and flexible leadership style will complement your skillset in compliance, manual handling and safe work practices – perhaps you’ll even lead the morning stretches with Zumba!
You’ll be a rostering guru and will ensure effective cost control through monitoring expenses. Working closely with the Laundry /Staff Village manager, you’ll have a keen eye for detail and will conduct thorough inspections of guest rooms and public areas daily to ensure standards are met and maintained.
You will have…
- Extensive experience in Housekeeping in the luxury hotel/resort industry

Senior Sales Manager - Leisure
With plans for future growth to our portfolio, we are currently seeking a dynamic Senior Sales Manager – Leisure to join our team
As Senior Sales Manager – Leisure, you will work with the team to ensure the maximisation of sales opportunities for each Lodge.
This is a pivotal role, responsible for inspiring and driving the success, growth, and performance of our travel trade booking channels. You will play a strategic role in generating and optimising revenue opportunities through the solicitation and development of new and existing business from key travel trade partners based in Australia, New Zealand, and emerging markets for the Baillie Lodges portfolio.
Reporting to our Sales GM, this role would suit an experienced Sales professional who has a solid understanding of the luxury travel market along with proven ability to build long term relationships with key stakeholders.
This role will see you;
- Cultivate and manage key travel trade relationships across Australia and New Zealand, and implement strategies to drive and improve commercial business outcomes
- Undertake direction and management of key travel trade partners
- Forge strategic alliances and partnerships with key wholesale, retail, and online agents to grow opportunities and raise the profile of the Baillie Lodges portfolio
- Participate in trade shows, sales trips and familiarisation programs as required, growing our presence within the industry.
- Embrace a culture of proactive selling – prospect new areas of business with decision makers and influencers across Australia and New Zealand retail travel, wholesale, and DMC channels to optimise leisure FIT business opportunities on behalf of the portfolio.
- Prepare, monitor and present sales business plans, budgets and reports;
- Personally, take ownership and manage key relationships with national, state and regional tourism organisations and high value clients
Do you have what it takes?
- Extensive experience in a proactive sales environment within the luxury sector of hotels and tourism industry.
- Strong negotiation skills with evidenced ability to convert business and maximize sales performance.
- Demonstrated understanding of all online distribution channels – including: OTAs, GDS, and channel management system.
- Significant accommodation sales experience across multiple geographic markets and segments for a luxury product;
